HONG KONG – As anticipation builds for the unveiling of the Asia’s 50 Best Restaurants 2026, the region’s culinary conversation has already begun with the release of the extended 51–100 list. More than just a prelude, this ranking offers a revealing snapshot of where and how Asia is eating right now: diverse, boundary-pushing, and more geographically expansive than ever.

This year’s extended list spans 27 cities, marking the broadest reach in the awards’ history. New destinations like Busan, Chengdu, Kanazawa and Nishikawa make their debut, signalling a shift away from traditional fine-dining strongholds toward a more decentralised, discovery-driven landscape.

Cities like Seoul, Bangkok, Singapore and Hong Kong continue to dominate, but the story in 2026 is less about concentration and more about distribution of talent. From hyper-local farm-to-table concepts to globally influenced tasting menus, the list reflects a dining culture that is both rooted and restless.

Seoul leads with seven entries, while Bangkok, Singapore and Hong Kong maintain strong showings—each city blending heritage with modernity in its own way. Meanwhile, Japan’s culinary footprint deepens beyond Tokyo, with Kanazawa and Nishikawa emerging as new gastronomic destinations.

At the 2025 ceremony in Seoul, Gaggan was named The Best Restaurant in Asia 

If there’s a defining theme this year, it’s intimacy and identity. Many of the new entries are chef-driven, deeply personal spaces:

  • In Busan, Fiotto’s farm-to-table ethos brings diners face-to-face with ingredients grown by the chefs themselves.

  • Mumbai’s Papa’s reimagines fine dining as a dinner party—playful, nostalgic and rule-breaking.

Across the list, chefs are turning inward, with more showcasing their heritage, their childhood memories and their immediate ecosystems, rather than outward to global trends. In addition, sustainability is no longer a differentiator; it’s an expectation. Restaurants like Bangkok’s Haoma and Bengaluru’s Farmlore go beyond sourcing locally, embedding zero-waste systems and on-site farming into their operations.Elsewhere, chefs are reviving indigenous ingredients, minimising environmental impact and building long-term relationships with producers. The message is clear: the future of fine dining in Asia is responsible, not just refined.

Another striking evolution is the fluidity of culinary identity. The old rules of cuisine—French, Japanese, Italian—are dissolving. In their place: hybrid, borderless expressions.

  • Hong Kong’s Andō fuses Argentine, Japanese and European influences.
  • New Delhi’s Inja bridges Indian and Japanese traditions.
  • Seoul’s San applies classical French technique to Korean ingredients.

This cross-cultural creativity isn’t forced—it reflects the lived experiences of chefs who have trained, travelled and returned home with new perspectives.

The excitement culminates on 25 March 2026, when Hong Kong hosts the awards for the first time. Held at the Kerry Hotel in partnership with the Hong Kong Tourism Board, the ceremony marks a milestone for a city long considered one of Asia’s culinary capitals.

Beyond the awards themselves, the programme includes collaborative dining events, thought-leadership talks and chef gatherings, turning the city into a global stage for gastronomy. The ceremony will also crown The Best Restaurant in Asia, following last year’s win by Bangkok’s Gaggan, and reveal special honours celebrating innovation, hospitality and social impact.

Ultimately, the 51–100 list starts off the celebrations, and builds hype for the soon-to-come awards. It’s a story of a region embracing diversity, championing sustainability and redefining what “best” truly means. As the spotlight now shifts to the top 50, one thing is certain: Asia’s dining scene is thriving and evolving at a pace the world can’t ignore.
