Food For Now: CÉ LA VI Singapore debuts ‘East Meets Extra’ Brunch

CÉ LA VI Singapore redefines the weekend with the launch of East Meets Extra, an elevated brunch experience happening every Saturday from 11.30am to 3.00pm. Perched at the pinnacle of Marina Bay Sands, and framed by a breathtaking city view and seascape, the new programme marries Modern Asian flavours with a dash of the unexpected. The programme acts as a sensorial journey guiding guests through the vibrancy of Southeast Asia, enlivened with play, taste and performance. Throughout the brunch, guests can look forward to elusive Chef’s Secret black boxes, captivating magic acts, and the high-energy beats of resident DJs to keep the vibe alive.

The brunch commences with a three-course menu that embodies CÉ LA VI’s Modern Asian identity, elevating regional produce with refined techniques and culinary artistry. Starters showcase the finest ingredients from the sea, such as Assorted Nigri, artfully presenting Otoro, Akami, Hamachi, Salmon, and Fluke. Or opt to indulge in the Beef Tartare Tart, drizzled with confit konbu and served with uni aioli. Guests can delight in a choice between six mains, brimming with local and global influences. The Braised Beef Short Ribs elevates a beloved local classic into a refined dish, with a rich velvety rendang sauce, and delicately garnished with pickled ginger flower. For another brunch-exclusive treat, savour Tiger Prawn, tossed in grainy black pepper sauce, served with zesty lime and charcoal oil.

Two sides are served for sharing, and the experience concludes with a choice between two desserts: Tropical Mango with coconut sorbet presents a sensorial twist on mango sticky rice, or the decadent Dulce Miso Toffee, featuring a sticky date pudding and enriched with gula melaka caramel. Adding an element of thrill, a Chef’s Secret black box arrives tableside, unveiling a surprise selection of signature canapes that perfectly complement the brunch. Enhancing the lavish affair are three hours of free-flow Champagne or cocktails.

Guests can toast to joie de vivre with Veuve Clicquot Yellow Label Brut, or savour brunch-only cocktails such as the Pearly Aperol Spritz featuring lychee, prosecco and Aperol and the Geisha, which spotlights the seamless blend of saké, gin, yuzu, pear and rosemary. Carving the city’s rhythm in the sky, CÉ LA VI’s Resident DJ, JASE, keeps the atmosphere vibrant and the energy pulsing with progressive eclectic beats, from groove-heavy House and nostalgic Disco, to sun-soaked Balearic sounds married with Nu Jazz edits flair. The spectacle deepens with intimate, close-up guest performances that blur between audience and act.
