Grand Hyatt Singapore’s modern European dining restaurant, Le Pristine Singapore, has announced the launch of its Sunday Brunch and Sunday Supper experiences from 7 September 2025. Conceived by Sergio Herman, former three Michelin-starred chef at Oud Sluis in the Netherlands, the new offerings mark a bold evolution for the restaurant, which will now open for dinner service from Wednesday to Saturday, while dedicating Sundays to a lavish daytime brunch and a convivial evening supper. This move reflects Herman’s lifelong philosophy of doing everything with passion and giving full attention to detail, balancing tradition with innovation through the new Sunday Brunch and Supper offering.
With the introduction of these new Sunday experiences, Grand Hyatt Singapore’s brunch ritual will now be held every Sunday at Le Pristine Singapore, offering guests an immersive weekend experience. Meanwhile, Pete’s Place, the hotel’s long-standing Italian restaurant, will continue serving its signature lunch seven days a week, providing a complementary option for both weekday and weekend diners.
Guided by Chef Sergio’s distinctive style and pursuit of perfection, Sundays at Le Pristine Singapore present two complementary dining journeys. Sunday Brunch is a lively, abundant affair designed for sharing and discovery, filled with playful creativity. In contrast, Sunday Supper offers an intimate close to the week, inspired by convivial family traditions and rooted in Herman’s Zeeland heritage.
At the heart of the new Singapore menus is Sergio’s Father’s Fish Soup, a cherished recipe from Chef Sergio’s early years with his father and their days working at Oud Sluis, a three- Michelin-starred restaurant in Zeeland. That experience catapulted Herman into the culinary scene as an ambassador for Zeeland and his commitment to balancing heritage with contemporary creativity.
“At Le Pristine Singapore, we wanted to bring the European spirit of gathering into Sundays,” shared Chef Sergio. “I learnt from my father that food is about care, connection, and detail. I carry these values with me into every menu, and our Sunday Brunch and Supper menus are an opportunity for guests to savour the moment, with dishes that reflect my heritage while celebrating Singapore’s vibrant culinary spirit.”
Le Pristine Singapore’s Sunday Brunch is a lavish yet playful affair that redefines indulgence with abundant flavours and a touch of whimsy. Available from 12pm to 3pm and priced at S$135 per person, the menu features a cold selection featuring Salad Le Pristine, vitello tonnato, and pumpkin burrata. The seafood bar offers hamachi, tuna, Irish Mor oysters, and gambero rosso with fingerlime, while the live stations serve pizzette marinara, ravioli ricotta verbena, and barbecue gambero. Guests can finish their brunch at the sweet bar, offering soft-serve with toppings, tiramisu, panna cotta, and chocolate tart.
The Sunday Supper, which is available from 6pm to 9pm and priced at S$125 per person, builds on the brunch’s offerings with the same cold and seafood selections, complemented by a choice of mains including Sergio’s Father’s Fish Soup, lamb with eggplant and tomato, seafood orecchiette, and chicken vol-au-vent. The dessert spread mirrors the brunch experience, with soft-serve, plated desserts, and mignardises. The supper brings warm and togetherness to the table, combining traditional European dishes with the comfort of home-style cooking for a satisfying end to the week.
To complement the dining experience, guests can enjoy the Sunday Brunch and Supper with a 2.5-hour free-flow beverage package, starting from S$50 per person. Sip on refreshing spritzes, classic cocktails such as a Bloody Mary, Bavik Super Pils, and non-alcoholic options like the Italian Sour. Wine lovers will appreciate a thoughtfully curated selection of white, red, and rosé wines from renowned regions including France, Australia and New Zealand. For those looking to elevate the occasion further, the package extends to premium champagne options, including Dom Pérignon Brut and Moët & Chandon Brut.
Enhancing the day-to-night experience for guests, Le Pristine Singapore has introduced a curated DJ programme, conceptualised by DJ Eden YC. Built around three core elements: Uplifting, Soulful, and Hopeful, the programme will feature sounds from R&B, jazz, funk, and soul, creating a positive and vibrant atmosphere while evoking emotions that foster a sense of connection between guests and the space. This thoughtfully designed soundscape forms part of Le Pristine Singapore’s signature brand identity, distinguishing the restaurant and ensuring each visit is memorable. Resident and guest DJs accompany guests throughout Sunday Brunch and Supper, with the September lineup featuring Eden YC, Duri0, James Selva, Candice B, and Fvder, delivering energy and intimacy with their soundtracks from day to night.
As part of its ongoing commitment to engaging with Singapore’s culinary scene, Le Pristine Singapore will also be participating in the Singapore Food Festival 2025. From 4 to 24 September, the restaurant will feature a curated tasting menu showcasing the restaurant’s modern European interpretations of local flavours. Highlights from the menu include the chilli king crab pizzette, Sergio’s Father’s Fish Soup, featuring locally sourced seafood, and Baba “Singapore Sling”. The tasting menu is priced at S$180, with optional wine pairings available at S$60 for three glasses or S$75 for four glasses, and non-alcoholic pairings at S$45 for three glasses.
