Perched high above the Novena skyline, Las Palmas, the rooftop bar at Courtyard by Marriott Singapore Novena, has launched Las Palmas Cocktail Volume 2.0, a vibrant new chapter inspired by the glamour and easygoing spirit of 1960s Palm Springs.

Conceptualised by Head Bartender Ron Aransay, this refreshed cocktail programme channels the carefree confidence of America’s golden decade, when art, film, and music collided to create icons and escapism was a way of life.
“Las Palmas has always been about optimism,” says Aransay. “This new menu invites guests to reimagine what the world could look like, inspired by the cultural icons of the time, from Hollywood pin-ups to vinyl records, all while keeping things relaxed, approachable, and unmistakably fun.”
Las Palmas’ latest menu unfolds like a love letter to mid-century America: playful, stylish, and nostalgic in all the right ways. Divided into four chapters, Modernist, Vinyl, Hollywood, and Getaway, each section explores a different facet of 1960s American pop culture, blending visual storytelling with inventive mixology.

From the Modernist section, Tokyo Cowboy stands out as a visual showstopper. Inspired by Japanese artist Hiroshi Nagai’s dreamy city-pop scenes, the drink features rice-paper prints that shift from sunset to starlight. Atomic-O Martini, meanwhile, riffs on Roy Lichtenstein’s pop art explosions, reimagining the espresso martini with cognac and Oreo shavings for a cheeky, indulgent twist.

The Vinyl chapter hums to the rhythm of California’s 1960s soundtrack. Bamba Paloma reinterprets Ritchie Valens’ Latin hit La Bamba with mezcal fat-washed in olive oil, grapefruit, maraschino, and rock melon: smooth, smoky, and sensual. Jungle Blues, a tropical Old Fashioned inspired by Creedence Clearwater Revival’s Run Through the Jungle, marries bourbon, banana, and pineapple in a nod to the decade’s raw energy and rebellion.

In Hollywood, cinematic glamour takes centre stage. Slick Rick, a nod to Leonardo DiCaprio’s Rick Dalton in Once Upon a Time… in Hollywood, combines Benriach 10 Single Malt Whisky with chrysanthemum air for a floral, bittersweet ode to faded stardom. For something more refined, Film Noir softens the smoke of Casablanca into a milk-washed Earl Grey highball with elderflower and citrus, a low-ABV escape for balmy Singapore nights.

Finally, Getaway is where tiki escapism meets Californian leisure. Tropical Vic pays homage to Trader Vic, the pioneer of tiki culture, with pink guava and kaffir lime for a refreshing island finish. Luau blends mezcal, tequila, salted corn, and creamy vegan half-and-half (a mix of coconut and oat), while the beloved Rose Bowl Spritz returns, a sparkling tribute to California’s iconic stadium and its timeless celebration of sport, music, and sunshine.

Located on Level 33 of the Courtyard by Marriott Singapore Novena, Las Palmas is a pastel paradise of poolside cabanas, cinematic sunsets, and curated playlists that shift from breezy afternoons to late-night cool.
