Stepping through the bar’s polished brass double doors feels like entering a different era, one where elegance ruled and conversation flowed as freely as champagne. Inside, a symphony of textures and tones creates a sense of composed grandeur: bold geometric floors anchor the space, while delicate floral motifs soften its edges.

At the heart of it all stands a breathtaking, birdcage-inspired back bar, an architectural centerpiece crafted from aged brass and glowing softly with the amber hues of rare spirits. The bar counter, clad in liquid metal and dark Tundra grey marble, shimmers with an understated brilliance. Deep reds, lush greens, and rich ebony set the mood, intimate yet cosmopolitan, much like Manhattan itself.
For those seeking privacy without seclusion, a semi-private enclave beckons, while suede banquettes invite lingering over conversation. Layered lighting, crystal sconces, and artful lithographs inspired by Picasso’s Toro series lend the finishing touches to an atmosphere both sophisticated and soulful.

At the helm of this new chapter is Kelvin Saquilayan, a name that already resonates in Singapore’s cocktail scene. Having honed his craft at the world-renowned Manhattan Bar, Kelvin brings a blend of international experience and local flair to his new role as Head Bartender.
His philosophy is as nuanced as his cocktails: “The hallmark of an exceptional bartender lies in creating a space where every guest feels seen and celebrated,” he says. “That’s what I hope to achieve here, a bar where every drink tells a story and every story feels personal.”
With accolades including Best Gin & Tonic of the Year at the East Imperial Gin Jubilee and regional championship titles with Woodford Reserve’s The Wonderful Race, Kelvin’s artistry lies in his ability to balance innovation with timeless technique.

Anchoring the new experience is “Time After Time,” an imaginative cocktail menu that takes guests on a spirited journey across five defining decades, each inspired by both New York and Singapore. From the jazz-fueled glamour of the Roaring Twenties to the disco exuberance of the ’70s and the creative cool of the ’90s, every drink captures a moment, a mood, and a conversation between two great cities.

Highlights include the Merlion Sling, a playful nod to Singapore’s heritage; Eternal Tropicalia, a Mai Tai-inspired escape to sun-drenched shores; and the Disco-tea-que Spritz, a sparkling wink to Studio 54. Coffee lovers will gravitate toward the Club Kid Espresso, while purists will appreciate the DOF.01 Old Fashioned, a modern reimagining of a timeless classic.

Then there’s the new signature Bloody Mary: The Straits Mary. Infused with bak kwa bourbon, tomato, chilli padi, and gochujang, it’s a cocktail that bridges continents — bold, smoky, and unmistakably Singaporean.

Three zero-proof creations, inspired by the menu’s time-travel motif, feature clarified teas, tropical ferments, and house cordials infused with pineapple, passionfruit, and oolong.
