The St. Regis Singapore Marks International Women’s Day with creativity and taste

In honour of International Women’s Day, The St. Regis Singapore is marking the occasion with a series of thoughtfully curated experiences that celebrate creativity, craftsmanship and the women shaping today’s culinary and cocktail scene.

From an elegant afternoon tea created with an acclaimed Hong Kong pastry chef to a lively Italian brunch and a one-night-only bar takeover by an award-winning bartender, the hotel’s programme blends refined dining with moments designed for gathering and celebration.

The celebration is anchored by a seasonal afternoon tea at The Tea Room, created in collaboration with acclaimed Hong Kong pastry chef Mandy Siu. Running from 4 March to 17 May 2026, the limited-time menu takes its inspiration from the brightness of spring, with citrus notes woven throughout the sweet selections. Siu — who has honed her craft at Michelin-starred restaurants and luxury hotels including L’Atelier de Joël Robuchon, The Peninsula Hong Kong, and The Ritz-Carlton — is known for her refined yet expressive pastry style.

Guests can expect a delicate line-up of desserts highlighting seasonal flavours such as yuzu, lemon, orange and lime. Standout creations include a Pink Grapefruit & Yuzu Cheesecake, Black Lemon Honey Gâteau and a Mahoe 76% Chocolate Flan. Classic Afternoon tea staples remain part of the experience, with freshly baked St. Regis scones joined by Siu’s own chocolate-orange variation, served with orange hazelnut whipped ganache, jam and clotted cream.

On the savoury side, the menu offers elegant bites such as foie gras sandwiches, lobster cannolo with wasabi mayonnaise and a truffle egg mayonnaise and asparagus mimosa tart.

Beyond the tea service, Siu’s signature Caramel Corn Cake — inspired by nostalgic cinema popcorn — will also appear at the hotel’s patisserie. The dessert layers sea salt caramel, popcorn mousse and cornflakes coustillant beneath a soft purple glaze, a subtle nod to the colour associated with International Women’s Day.

On 8 March, celebrations continue at Sophia, where the hotel’s Italian restaurant hosts a special International Women’s Day Sunday Brunch. The dining room transforms into a lively gathering space with live music and an abundant spread that includes a mozzarella bar, freshly made pastas and a roaming tiramisu cart. Guests can explore dishes such as Guazetto Siciliano — a hearty seafood stew of clams and mussels — alongside truffled polenta and Prosciutto di Ricciola, a cured amberjack dish accented with citrus and fennel.

In honour of the occasion, women attending the brunch will also enjoy complimentary free-flow cocktails created especially for the celebration. Among them are the Violet Empress, blending vanilla-infused vodka with ube cream liqueur, and Her Grace, a bright citrus cocktail with subtle berry notes and a light sparkle.

Later that evening, The St. Regis Bar will host a special guest shift featuring Pia Zhu, senior bartender of COA Shanghai. The Shanghai bar is part of the celebrated COA Hong Kong family, widely recognised for its agave-focused cocktail programme and ranked on both Asia’s 50 Best Bars and The World’s 50 Best Bars lists.

For one night only, Zhu will present a curated menu of cocktails that reflect her travels and creative approach to flavour. Highlights include Coconut Milk Punch — combining rum, coffee and coconut cream, as well as Celery Fizz, a refreshing mix of tequila blanco, pisco, celery syrup and clarified apple juice. She will also serve the Crimson Sling, her own contemporary interpretation of the iconic Singapore Sling, closing the evening with a tribute to the city’s most famous drink.

Across pastry, cuisine and mixology, the programme at The St. Regis Singapore shines a spotlight on women shaping the global hospitality landscape. Whether through the elegance of an afternoon tea, the conviviality of a Sunday brunch or the theatre of a cocktail bar takeover, the experiences invite guests to celebrate the spirit of International Women’s Day through flavour, craft and shared moments.
