Tipple Time: LeVeL33 & Prohibition Liquor Co. Crafts Singapore’s First Beer-Integrated Gin to Celebrate 15-Year Milestone

At 33 floors above the Marina Bay skyline, where the city’s lights meet the clouds, LeVeL33 has always been about elevation, not just in altitude, but in ambition. As Singapore’s highest urban microbrewery, recognised by the Guinness World Records™, it has spent fifteen years redefining what it means to brew in the city. And now, to celebrate that milestone, LeVeL33 is taking its craft to new heights by teaming up with Australia’s Prohibition Liquor Co. to create Singapore’s first-ever beer-integrated gin.

The LeVeL33 Prohibition Gin, launching on 1 November 2025, is the product of a cross-continental collaboration that began with a visit in 2024, when Prohibition Liquor Co.’s founders stopped by the microbrewery for what was meant to be a casual exchange of ideas. What followed was an inspired partnership between two brands that share a deep respect for tradition and innovation. The idea was as audacious as it was poetic, to blend LeVeL33’s craft beer with Prohibition’s distilling finesse and capture both worlds in a single bottle.

The core of this new spirit lies LeVeL33’s signature Brut Beer, a creation born from the brewery’s earlier collaboration with Champagne house Barons de Rothschild. Brewed using the Méthode Traditionnelle, the same process that gives Champagne its fine effervescence, the beer undergoes a second fermentation in the bottle, resulting in elegant bubbles and a crisp, dry finish. When macerated before distillation, the beer lends the gin a layered complexity, effervescent yet grounded, refined yet playful.

“For our 15th anniversary, we wanted to craft something that reflects our shared dedication to innovation and craftsmanship,” says Dr. Martin Bém, Founder and Managing Director of LeVeL33. “After countless rounds of tasting and fine-tuning with Prohibition Liquor Co., we created a bottle that celebrates both our journeys — and Singapore itself.”

That celebration comes alive in the gin’s composition. Built on the classic foundation of juniper and coriander, it bursts with the bright vibrancy of blood orange, calamansi, and pomelo, ingredients that nod to Singapore’s tropical heritage. The warmth of mace and ginger gives the spirit depth, while the delicate hop freshness from the Brut Beer weaves through the citrus and spice, tying everything together in a distinctly Singaporean expression. It’s a gin equally at home in a martini, a G&T, or a contemporary cocktail that captures the energy of the city.

For Adam Carpenter, Founder and CEO of Prohibition Liquor Co., the collaboration was a creative love letter to Singapore. “We’ve always had a strong connection with the city and its cocktail culture,” he says. “To create something this unique and to launch it at a venue with one of the best views in the world feels incredibly special.”

Behind the scenes, the project was as much a technical pursuit as an artistic one. Prohibition Liquor Co.’s Head Distiller, Hugh Lumsden, worked closely with the LeVeL33 team through multiple tasting sessions to strike the perfect balance of citrus brightness, spice, and beer influence without losing the essential character of gin. Even the bottle’s design tells part of the story: co-designed by Carpenter himself, it reflects both the spirit’s premium quality and its one-of-a-kind foundation in LeVeL33’s beer.

The gin will be available exclusively at LeVeL33 from 1 November, priced at SGD $320++ for dine-in and SGD $180+ online, while stocks last. To mark the occasion, the microbrewery is also unveiling a limited-time cocktail menu for November, showcasing the spirit’s versatility through four bespoke creations. The Prohibited G&T keeps things classic with Fitch & Leeds Indian Tonic, while the Prohibited Dirty Martini leans savoury and sophisticated with olive brine and lemon bitters.

The Sunset Martini, with its blend of gin, peach, vanilla, and citrus, captures the glow of dusk over Marina Bay, while the Skyline’s Cobbler brings a tropical burst of passionfruit, lemon, and grenadine, a toast to the view and the spirit of celebration. Each cocktail is priced at SGD $26++, offering guests a chance to sip the milestone in style.

From its beginnings as a pioneering concept in urban brewing to its latest foray into distillation, LeVeL33 has never stopped innovating. The LeVeL33 Prohibition Gin is more than a commemorative bottle, it’s a statement of intent, a blend of past and future distilled into a single, luminous pour. As the microbrewery celebrates fifteen years in the clouds, one thing is clear: LeVeL33 isn’t just raising a glass to its legacy. It’s redefining it, one gin at a time.
