Fifteen years ago, when LeVeL33 opened its doors atop the Marina Bay Financial Centre, the idea of an urban microbrewery perched 33 floors above Singapore’s skyline seemed almost audacious. Today, that bold vision has not only endured but evolved into one of the city’s most recognisable dining and drinking destinations — a place where craftsmanship, sustainability, and shared experiences take centre stage.

This December, LeVeL33 celebrates its 15th anniversary, a milestone that invites both reflection and anticipation. For Founder and Managing Director Dr. Martin Bém, the moment is a testament to the staying power of the concept and the people behind it.

“We are obviously very happy to have achieved this milestone of 15 years in operation in Singapore,” he says. “It is a big success to the whole team and to the concept. We are looking forward to the next 15 years… and hopefully to a LeVeL33 concept overseas in a new market!”

Much of LeVeL33’s endurance stems from a steadfast commitment to its original craft ethos. From its signature brews to its inventive culinary direction, craftsmanship remains the heartbeat of the brand.

In recent years, that spirit of experimentation has taken new forms — most notably in the LeVeL33 x Prohibition Gin, Singapore’s first beer-integrated gin created with Australia’s Prohibition Liquor Co. Combining LeVeL33’s Brut Beer with botanicals like calamansi and blood orange, the gin captures the brewery’s fascination with combining tradition and modernity.

That same philosophy extends to the Cellar & Pantry Collection, a curated range of craft beers, boutique wines, and artisanal beer-inspired products. Items like Blond Lager & Chardonnay Dressing and Stout Caramel & Roasted Pecan Cookies show how beer ingredients can be reimagined beyond the tap.

Long before sustainability became a hospitality buzzword, LeVeL33 was quietly weaving circularity into its operations. Every month, around 250 kilograms of spent grain — a byproduct of brewing — is repurposed into fresh pasta, breads, and desserts. The microbrewery has also made major strides in reducing its energy and water usage.

The numbers tell a compelling story:
— Nearly 6% less water used per guest.
— Over 18,000 litres of water served via an in-house still and sparkling system, avoiding 8.2 tonnes of CO₂ emissions.
15% reduction in gas consumption.
— A remarkable 26% drop in electricity use within the first year of efficiency changes.

Even coffee grounds get a second life through a partnership with A1 Environment, diverting 80 kilograms from landfill and preventing the equivalent of charging 27,000 smartphones in emissions.

The efforts have not gone unnoticed — LeVeL33 was awarded the prestigious Three-Star Food Made Good Sustainability Award, underscoring its commitment to thoughtful, responsible growth.

Over the years, LeVeL33 has become a familiar backdrop for birthdays, farewells, first dates, and everything in between. Many of its most memorable moments have emerged from collaborations with chefs, artisans, and producers — from Janice Wong to Butcher Box — and from traditions like National Day fireworks dinners and New Year’s Eve celebrations.

The brand has cultivated a personality that mirrors the city it overlooks: welcoming, creative, and always evolving.

That evolution continues into its next chapter. The microbrewery is gearing up for a fresh collaboration with German brewer Erdinger, set to launch in the coming months — a fusion of brewing traditions that hints at the brand’s expanding horizons.

The anniversary festivities begin on Sunday, 7 December 2025, with a rooftop celebration from 12 PM to 4 PM. Guests can expect free-flow house-brewed beers and a menu of dishes and handcrafted cocktails priced at SGD $15++, reflecting both nostalgia and modernity under Executive Chef Jake Kowalewski’s direction.

The star of the show? Hoppy 15, a special 15th Anniversary Brew crafted with — fittingly — 15 different hops. Launched in late November, the limited-release pale ale will be available both on tap and in specialty cans throughout December.

Complementing the beer lineup is a mobile bar dedicated to the LeVeL33 Prohibition Gin, serving four signature cocktails that blend brewing and distilling in unexpectedly harmonious ways. A DJ set and a live art performance — capturing LeVeL33’s journey on canvas — round out the afternoon.
