The evening begins delicately, with kombu and sake-cured Japanese scallops served chilled in yuzu dashi. Clean, oceanic and gently umami, it sets the tone for what follows. A confit king salmon arrives next, elevated by a wheat beer and vanilla emulsion that brings subtle malted warmth without overpowering the fish.

The festivities begin with LeVeL33’s signature Lo Hei, reimagined through a modern, beer-inspired lens. Shredded vegetables, pomelo and mandarin are tossed with edible flowers, stout beer crisps and spiced nuts, all brought together by a house-made lager and orange dressing. Guests can elevate the prosperity toss with premium seafood additions, from sustainable prawns to sashimi, or go all out with Kaluga Queen caviar crowning the platter.
From mid-February onwards, the focus shifts to reunion-style centrepieces meant to anchor the table.
