High above the glittering skyline of Marina Bay, where glass towers meet the water’s edge, LeVeL33 is ushering in the season with a menu that feels as fresh and optimistic as spring itself.
Dubbed “Flavours of Spring,” this limited-time dining experience is less about rigid fine dining and more about celebrating the quiet beauty of seasonal produce—elevated, of course, by the restaurant’s signature ContemBrewery approach, where modern European cuisine meets the craft of in-house brewing.

Available throughout April from 5pm, the four-course menu ($108++ per guest) reads like a love letter to springtime ingredients. Think white asparagus, spring peas, rhubarb, and wild garlic, all woven together with premium proteins such as Wagyu beef and New Zealand lamb.
The experience opens gently, with a chilled asparagus, spring pea, and leek soup. Light yet layered, it’s brightened with crème fraîche and a subtle hint of yuzu oi,an elegant way to awaken the palate.
Then comes a dish that perfectly captures LeVeL33’s identity: a burrata paired with white asparagus and confit tomato, finished with a stout balsamic. It’s a small but clever nod to the venue’s brewing roots, adding depth without overwhelming the delicate freshness of the ingredients.

For mains, diners are invited to lean into either comfort or indulgence.
- The New Zealand lamb rump is earthy and warming, balanced with Jerusalem artichoke purée, honey-glazed carrot, and black garlic jus.
- The Westholme Wagyu petit tender steak, on the other hand, is unapologetically rich, accented by burnt leek purée, roasted baby turnips, and a luxurious beef fat Bordelaise.
Both dishes reflect the kitchen’s philosophy: letting high-quality produce speak, while adding just enough technique to elevate without overcomplicating.
Dessert brings the meal full circle with a panna cotta that feels like spring in its purest form. Made with Tasmanian Leatherwood honey and Greek yoghurt, it’s silky and lightly floral, balanced by tart rhubarb compote, strawberries, and blueberries.

Part of what makes LeVeL33 special isn’t just the food—it’s the setting. Perched atop the Marina Bay Financial Centre, it holds the distinction of being the world’s highest microbrewery in a building. Copper brewing tanks gleam at the heart of the space, reminding guests that every dish can be paired with a beer crafted just metres away.
It’s this seamless blend of craft, cuisine, and atmosphere that transforms “Flavours of Spring” from a seasonal menu into a full sensory experience. Whether you’re planning a sunset dinner, a special occasion, or simply looking to indulge in something thoughtfully curated, this is one of those rare menus that captures a moment in time—best enjoyed before the season slips away.
