Perched high above the city at Capital Tower, SUSHISAMBA Singapore is turning up the heat this May with a curated series of one-night-only dining and cocktail experiences designed for those who like their nights a little more memorable, and their menus a lot more exciting.
Blending Japanese, Brazilian, and Peruvian influences, the restaurant’s signature tri-cultural identity sets the perfect stage for a month that celebrates bold flavours, cross-cultural collaboration, and a touch of theatrical flair. The spotlight first falls on Peruvian Perspectives, an exclusive chef collaboration on 19 May. Helmed by SUSHISAMBA’s Senior Executive Chef alongside guest chefs Daniel Chavez and Tamara Chavez of Canchita Peruvian Cuisine, the evening promises a deep dive into the vibrant world of Peruvian gastronomy.
This is a dinner that holds dialogue between culinary traditions. Across four courses, diners move through a spectrum of flavours that feel both rooted and refreshingly modern. The journey begins with a tropical Coconut & Pandan Pisco Sour, setting a lively tone before giving way to bright, citrus-driven starters like tiradito and causa layered with spice, texture, and acidity.
As the evening unfolds, dishes grow richer and more complex. Think silky Chilean sea bass kissed with miso, or smoky wagyu skewers layered with Peruvian chillies and creamy sauces. The finale? A playful take on tres leches cake, where tropical fruit and pistachio bring balance to indulgence.

Two nights later, on 21 May, the mood shifts from bold to refined with the Boizel Éclat Champagne Dinner, an evening dedicated to the art of pairing. Hosted in collaboration with Champagne Boizel, a heritage maison founded in 1834, the experience offers a guided tasting through four distinct champagne expressions. With insights from export manager Matthieu Desmaison and SUSHISAMBA’s own sommelier team, the dinner is as educational as it is indulgent.
The menu leans into the restaurant’s seafood strengths, allowing each pour to shine. Crisp, mineral champagnes lift delicate yellowtail and sushi courses, while deeper, vintage expressions stand up to the richness of wagyu. The evening closes on a tropical note, where caramelised pineapple and coconut desserts meet their sparkling match.

Rounding out the month on 28 May is SAMBA Shift, a bar takeover that brings a slice of Phnom Penh’s rising cocktail culture to Singapore. Guest bartenders Jason Daniel of Elephant Bar and Nel Pen of Kravat Speakeasy Bar take over the bar for one night, each presenting four cocktails that reflect their distinct philosophies.
Expect contrast and creativity, with Jason’s polished, classic approach alongside Nel’s more experimental, story-driven concoctions. It’s a rare opportunity to experience two sides of Southeast Asia’s evolving mixology scene, all in one sitting.
