Food and Drink: Celebrate International Women’s Day with a Culinary Journey by Chef Amy at Sofitel Singapore City Centre

This March, Sofitel Singapore City Centre invites diners to celebrate International Women’s Day through the art of food. For one month only, Racines will feature a specially curated three-course menu by Senior Sous Chef Amy, a heartfelt tribute to women in the culinary world.

Chef Amy’s creations are a masterclass in storytelling through cuisine. Each dish reflects her philosophy: balance, depth, and quiet confidence, inspired by the women who shape kitchens, cultures, and communities.

Born in Malaysia, Chef Amy first discovered her love of cooking in her family kitchen, helping her mother prepare everything from comforting local dishes to Western favourites. These early experiences sparked a passion that would define her career. After culinary school, she honed her skills in banquet kitchens and French fine-dining restaurants, where she embraced precision, finesse, and timeless technique. In 2014, her talent was recognised internationally when she won a Gold Medal in Plate Dishes at Food and Hotel Asia (FHA)—a milestone that affirmed her path as a rising star in the culinary world. Today, Chef Amy continues to blend heritage, technique, and personal storytelling into every dish she creates.

The evening begins with Nanyang-Style Foie Gras, a playful twist on a classic French delicacy. Pan-roasted and coffee-cured foie gras is layered with cocoa nibs and salted kaya butter, tucked between warm brioche and finished with a gentle coffee jus. Traditional berries are replaced with distinctly local flavours, creating a dish that’s comforting, sophisticated, and innovative.

Next comes the Friselva Pork Jowl, slow-cooked to tender perfection and lightly grilled, paired with chorizo, artichoke barigoule, and a vibrant sauce verte. The dish embodies Chef Amy’s approach to cooking: honest flavours, thoughtful balance, and understated elegance.

Dessert is Noir, a modern reinterpretation of the Black Forest cake from Chef Amy’s childhood. Layers of brandied cherries and chocolate textures deliver a nostalgic finale that is both joyful and refined—a sweet homage to memory and home.

For an elevated experience, diners can pair the menu with a glass of Kressmann Chardonnay or Merlot. The dinner is available daily from 6 pm to 10 pm throughout March at $58++ per person, offering an intimate way to honour women in both the kitchen and the community.
