There’s something deliciously indulgent about a long, unhurried brunch, the kind where time stretches, plates keep coming, and conversation flows as easily as the drinks. That’s exactly the mood Paul Pairet is bringing back to Singapore with his latest weekend offering at Moutarde.
Five months after the restaurant first opened its doors at Resorts World Sentosa, Pairet returns to introduce The Good Brunch, a new ritual designed for those who believe weekends should be savoured, not rushed. Think generous French flavours, dishes made for sharing, and a dining experience that leans more toward relaxed indulgence than rigid structure.
Available every Saturday and Sunday from late morning through mid-afternoon, The Good Brunch isn’t about a single format. Instead, it unfolds in layers. Guests drift between abundant buffet counters, à la minute plates prepared fresh from the kitchen, and a signature carvery that anchors the experience. It’s less about piling plates high and more about grazing, discovering, and lingering.
This approach reflects what Moutarde has quickly become known for: a place where fine-dining technique meets the warmth of a French bistro. The philosophy is simple but deliberate: abundance without excess, pleasure without formality. In other words, food that feels special without feeling stiff.
The meal often begins with comforting classics, with creamy egg mayo, charcuterie, and cheeses, before moving into dishes that arrive fresh and hot: a deeply savoury French onion soup, airy cheese soufflé, smoky grilled piquillos, and brunch staples like eggs Benedict or a perfectly crisp croque-madame. Then comes the main event: the carving station, where larger, shareable cuts take centre stage. Depending on the day, that might mean wood-roasted prime rib, char-grilled chicken, or succulent suckling pig.
Dessert leans into nostalgia, closing the meal on a playful note with treats like golden waffles and indulgent French toast, simple pleasures done exceptionally well.
Drinks follow the same easygoing philosophy. A base selection of juices, teas, coffees, and house creations keeps things light, while those in the mood can elevate the experience with free-flow wines, cocktails, or even champagne. It’s designed to suit everything from casual catch-ups to celebratory gatherings.
The Good Brunch isn’t just about what’s on the table. It’s about how you experience it: slowly, sociably, and with just the right amount of indulgence.
