
Acclaimed Japanese dining concept Hikiniku To Come is set to make its Singapore debut at VivoCity on 29 May 2026, bringing with it a highly distinctive take on one of Japan’s most comforting dishes: the humble hamburg steak, reimagined as a refined, ritual-driven dining experience.
Originating from Tokyo’s Kichijōji district, the cult-favourite brand has built its reputation on an uncompromising philosophy of simplicity, precision, and freshness. At its core is a single idea—that food tastes best at the exact moment it is prepared. This belief has shaped every detail of the Hikiniku To Come experience, turning a familiar comfort dish into something far more intentional and immersive.

In Singapore, the concept will be distilled into a focused signature set ($27.90++), built around three 100% Japanese beef hamburg steaks. Rather than being served all at once, each patty arrives sequentially, encouraging diners to experience the dish in stages—each bite slightly different in temperature, texture, and expression. The result is a meal that unfolds gradually, designed more like a curated progression than a traditional main course.
The restaurant itself reflects this same sense of intimacy and precision. With just 28 counter seats and an additional 10-seat private dining room, the space is designed around openness and immediacy. Guests are positioned around central charcoal grills in a “Just Grilled” seating format, offering an unobstructed view of chefs working in real time. Every plate is served directly from grill to counter, reinforcing the brand’s emphasis on freshness and transparency.

Founded in 2020 by chef-restaurateur Shohei Yamamoto, Hikiniku To Come was born from decades of experience working with hamburg steak. Yamamoto’s vision was to elevate the dish by stripping it back to its essentials—meat, heat, and timing—while refining every step of the process to highlight ingredient quality and precision. The brand quickly developed a following in Japan for its disciplined approach and modern reinterpretation of a classic staple.
At the heart of the experience is the brand’s guiding philosophy: “Just Ground, Just Grilled, Just Cooked.” This principle is not just a tagline, but a structured approach that defines how each component is prepared and served. Beef is freshly ground in-house under strict temperature control, shaped by hand using a distinctive technique designed to preserve texture, then grilled over binchotan charcoal and served within moments of reaching peak doneness.

Each set is accompanied by a thoughtfully designed tasting journey. Diners are guided through recommended ways of enjoying each patty—starting with the first bite as-is to appreciate the pure flavour of charcoal-grilled beef, followed by variations that introduce grated radish and ponzu for brightness, and culminating in a richer finish with egg yolk or tamago-style rice combinations. These gradual shifts transform the meal into a layered sensory experience, revealing subtle changes in aroma, texture, and depth.
Condiments such as Japanese pepper sauce, soy-based flakes, and chilli oil add further flexibility, allowing guests to personalise each bite while still staying within the framework of the concept. Even the rice is treated with equal importance—freshly cooked in traditional hagama pots in staggered batches throughout the day, ensuring every bowl is served at peak temperature and texture.

The experience is built around rhythm and timing, from the pacing of the patties to the constant replenishment of rice, which is offered without limitation. Key ingredients, including premium Japanese beef and carefully selected eggs, are sourced directly from Japan, underscoring the brand’s commitment to authenticity and consistency.
During opening, the Singapore outlet will operate on a walk-in basis, with a digital queue system introduced once capacity is reached. As part of its launch celebration, the first 100 diners who visit and follow the brand’s Singapore Instagram account will receive a limited-edition glass cup, available while stocks last.
